People have been making Pickles for more than 2000 years. It is one of the oldest methods of preserving food, although it does not have quite the same history as drying, salting and smoking of foods. In the West, the Romans turned it into a fine art and the Egyptians in the Middle East also contributed to Pickling. In India it was turned into a fine art with various seasonal fruits, vegetables and sometimes meats being pickled for providing a taste of the fruit or vegetable through the year.
